- For the Meatloaf:
- 1 1/2 lbs ground beef
- 8 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg, beaten
- 1/4 cup BBQ sauce (plus extra for glazing)
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- For the BBQ Glaze:
- 1/2 cup BBQ sauce
- 2 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp mustard
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare Meatloaf Mixture:
- In a large bowl, combine ground beef, cooked and crumbled bacon, shredded cheddar cheese, breadcrumbs, milk, onion, garlic, beaten egg, 1/4 cup BBQ sauce, Worcestershire sauce, salt, and pepper.
- Mix until everything is evenly distributed.
- Shape and Glaze:
- Shape the mixture into a loaf on the baking sheet or press it into the loaf pan.
- In a small bowl, mix together the BBQ sauce, ketchup, brown sugar, and mustard for the glaze.
- Brush half of the glaze over the top of the meatloaf.
- Bake:
- Bake the meatloaf in the preheated oven for 45 minutes.
- Remove from the oven, brush with the remaining glaze, and bake for an additional 15 minutes or until the internal temperature reaches 160°F (71°C).
- Rest and Serve:
- Let the meatloaf rest for 10 minutes before slicing.
- Serve with mashed potatoes, roasted vegetables, or a fresh salad.
Notes
- Make Ahead: You can prepare the meatloaf mixture a day in advance and refrigerate it until you’re ready to bake.
- Substitutions: Ground turkey or chicken can be used instead of beef for a lighter version.
