Description

This BBQ Bacon Cheeseburger Meatloaf combines all the flavors you love in a classic bacon cheeseburger with the comforting texture of meatloaf. It’s a hearty dish packed with ground beef, crispy bacon, cheddar cheese, and topped with a sweet and tangy BBQ glaze. Perfect for dinner, and even better as leftovers!

  • For the Meatloaf:
    • 1 1/2 lbs ground beef
    • 8 slices bacon, cooked and crumbled
    • 1 cup shredded cheddar cheese
    • 1/2 cup breadcrumbs
    • 1/2 cup milk
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 large egg, beaten
    • 1/4 cup BBQ sauce (plus extra for glazing)
    • 1 tbsp Worcestershire sauce
    • 1 tsp salt
    • 1/2 tsp black pepper
  • For the BBQ Glaze:
    • 1/2 cup BBQ sauce
    • 2 tbsp ketchup
    • 1 tbsp brown sugar
    • 1 tsp mustard

Instructions

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • Prepare Meatloaf Mixture:
    • In a large bowl, combine ground beef, cooked and crumbled bacon, shredded cheddar cheese, breadcrumbs, milk, onion, garlic, beaten egg, 1/4 cup BBQ sauce, Worcestershire sauce, salt, and pepper.
    • Mix until everything is evenly distributed.
  • Shape and Glaze:
    • Shape the mixture into a loaf on the baking sheet or press it into the loaf pan.
    • In a small bowl, mix together the BBQ sauce, ketchup, brown sugar, and mustard for the glaze.
    • Brush half of the glaze over the top of the meatloaf.
  • Bake:
    • Bake the meatloaf in the preheated oven for 45 minutes.
    • Remove from the oven, brush with the remaining glaze, and bake for an additional 15 minutes or until the internal temperature reaches 160°F (71°C).
  • Rest and Serve:
    • Let the meatloaf rest for 10 minutes before slicing.
    • Serve with mashed potatoes, roasted vegetables, or a fresh salad.

Notes

  • Make Ahead: You can prepare the meatloaf mixture a day in advance and refrigerate it until you’re ready to bake.
  • Substitutions: Ground turkey or chicken can be used instead of beef for a lighter version.
