Ingredients
Scale
- 1 pound ground beef
- 1 cup long-grain white rice
- 1 can (15 oz) diced tomatoes, drained
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup beef broth
- 1 1/2 cups shredded cheddar cheese
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Cook the rice according to the package instructions and set it aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until soft and fragrant, about 3 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
- Stir in the diced tomatoes, cream of mushroom soup, beef broth, paprika, cumin, salt, and pepper. Let it simmer for 5 minutes.
- Combine the cooked rice with the beef mixture. Mix well.
- Pour the mixture into the prepared baking dish. Top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley, if desired, and serve hot.
Notes
- You can substitute brown rice for white rice; just adjust the cooking time as brown rice takes longer to cook.
- Add vegetables like bell peppers, corn, or peas to the beef mixture for extra flavor and nutrition.
- This casserole can be made ahead of time and refrigerated for up to 24 hours before baking. If baking from the fridge, add 10 minutes to the baking time.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
