  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the rice according to the package instructions and set it aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until soft and fragrant, about 3 minutes.
  4. Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
  5. Stir in the diced tomatoes, cream of mushroom soup, beef broth, paprika, cumin, salt, and pepper. Let it simmer for 5 minutes.
  6. Combine the cooked rice with the beef mixture. Mix well.
  7. Pour the mixture into the prepared baking dish. Top with shredded cheddar cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh parsley, if desired, and serve hot.

  • You can substitute brown rice for white rice; just adjust the cooking time as brown rice takes longer to cook.
