Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce (optional for extra flavor)
  • 4 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 1/4 cup water or chicken broth
  • 2 tbsp cornstarch (optional, for thickening)
  • Green onions and sesame seeds (optional, for garnish)

Instructions

  • Prepare the sauce: In a bowl, whisk together honey, soy sauce, hoisin sauce (if using), minced garlic, apple cider vinegar, ground ginger, and black pepper.
  • Arrange the chicken: Place the chicken breasts in the bottom of the crockpot.
  • Pour the sauce: Pour the prepared sauce over the chicken, making sure each piece is well-coated.
  • Slow cook: Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  • Optional thickening: If you prefer a thicker sauce, remove the chicken and set aside. Mix cornstarch with water to create a slurry, then stir it into the sauce. Turn the crockpot to high and cook for an additional 15-20 minutes until the sauce thickens.
  • Serve: Return the chicken to the crockpot and coat with the thickened sauce. Garnish with green onions and sesame seeds if desired. Serve hot over rice or noodles.

Notes

  • Adjust the amount of honey and soy sauce according to your taste preferences.
  • For a spicier kick, add sriracha or red pepper flakes to the sauce.
  • This dish can be prepared ahead of time and stored in the refrigerator for up to 3 days.
  • To make it gluten-free, use tamari or coconut aminos instead of soy sauce.
