  • 8 taco shells, broken into large chips
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup diced tomatoes
  • ½ cup black beans (optional)
  • ½ cup corn kernels (optional)
  • ¼ cup sliced jalapeños
  • ¼ cup chopped cilantro
  • ½ cup sour cream
  • ½ cup guacamole
  • ¼ cup salsa
  • Olive oil (for cooking)

Instructions

  • Prepare the Taco Shell Chips: Break taco shells into large chips and spread them evenly on a large baking sheet.
  • Cook the Beef: Heat a drizzle of olive oil in a skillet over medium heat. Add ground beef and cook until browned. Stir in the taco seasoning with a small amount of water, then let it simmer for 2-3 minutes.
  • Assemble the Nachos: Preheat your oven to 375°F. Arrange the taco shell chips on a baking sheet. Layer the seasoned beef on top, followed by cheddar and Monterey Jack cheese. Add diced tomatoes, black beans, corn, and jalapeños.
  • Bake: Bake in the oven for 8-10 minutes or until the cheese is fully melted and bubbly.
  • Top and Serve: Remove from the oven and top with sour cream, guacamole, salsa, and cilantro. Serve hot!
