  • 1 lb ground beef
  • 8 strips bacon, cooked and crumbled
  • 1 cup mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup Swiss cheese, shredded
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp thyme (optional)
  • 1/4 cup ketchup (for glaze)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Sauté mushrooms, onions, and garlic in a skillet until softened (about 5 minutes). Set aside to cool.
  • In a large bowl, combine ground beef, cooked bacon, sautéed mushrooms, onions, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, pepper, and thyme. Mix well.
  • Gently fold in the Swiss cheese, ensuring it’s evenly distributed.
  • Shape the mixture into a loaf and place it in the prepared loaf pan.
  • Spread ketchup over the top of the meatloaf as a glaze.
  • Bake for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For a leaner version, you can substitute ground beef with ground turkey.
  • Leftovers make great sandwich fillings the next day.
  • Feel free to use other cheeses like cheddar or mozzarella if you prefer.
  • You can store cooked meatloaf in an airtight container in the fridge for up to 3 days.
