Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups pineapple chunks (fresh or canned)
  • 1 cup uncooked white rice
  • 1 ½ cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon brown sugar
  • 2 tablespoons chopped green onions (optional)

Instructions

  • Season Chicken: Rub chicken breasts with garlic powder, ginger powder, salt, and black pepper.
  • Cook Chicken: In a large skillet, heat olive oil over medium heat. Cook chicken breasts for 5-6 minutes on each side until browned.
  • Add Pineapple and Sauce: Add pineapple chunks, soy sauce, and brown sugar. Stir and let it simmer for 2 minutes.
  • Add Rice and Broth: Pour in the uncooked rice and chicken broth. Stir to combine.
  • Simmer: Cover and reduce heat to low. Let it simmer for 15-20 minutes until the rice is fully cooked and the liquid is absorbed.
  • Serve: Fluff the rice with a fork. Serve chicken on top of rice and garnish with green onions if desired.

Notes

  • For extra flavor, marinate the chicken in the soy sauce mixture for 30 minutes before cooking.
  • To make the dish more colorful, add vegetables like bell peppers or broccoli.
  • Fresh pineapple gives a brighter flavor, but canned pineapple is a convenient option.
