  • 12 oz cheese tortellini
  • 1 lb shrimp, peeled and deveined
  • 8 oz mushrooms, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
  • In the same skillet, add the sliced mushrooms and cook until browned and softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  • Reduce heat to low, then add the butter and let it melt. Pour in the heavy cream, stirring constantly, and cook for 2-3 minutes until the sauce begins to thicken.
  • Stir in the grated Parmesan cheese and nutmeg, mixing well until the cheese is fully melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.
  • Return the cooked shrimp to the skillet, then add the cooked tortellini. Gently toss everything together until the tortellini is fully coated in the Alfredo sauce.
  • Serve hot, garnished with fresh parsley.

Notes

  • You can prepare this dish ahead of time and refrigerate it for up to 24 hours before baking.
  • For a different flavor profile, try adding a bit of chopped jalapeño to the filling for a spicy kick.
