- 1 lb shrimp, peeled and deveined
- 8 oz mushrooms, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream

- 1/4 cup unsalted butter
- 1/4 tsp nutmeg
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook until browned and softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Reduce heat to low, then add the butter and let it melt. Pour in the heavy cream, stirring constantly, and cook for 2-3 minutes until the sauce begins to thicken.
- Stir in the grated Parmesan cheese and nutmeg, mixing well until the cheese is fully melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.
- Return the cooked shrimp to the skillet, then add the cooked tortellini. Gently toss everything together until the tortellini is fully coated in the Alfredo sauce.
- Serve hot, garnished with fresh parsley.
