  • 8 oz elbow macaroni
  • 6 slices of bacon
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon mustard powder

Instructions

  • Cook the macaroni: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  • Prepare the bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cool, crumble into small pieces.
  • Cook the beef: In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add the diced onion and cook until translucent. Add the minced garlic and cook for 1 minute. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain excess fat if necessary.
  • Make the cheese sauce: In a medium saucepan, heat a tablespoon of butter over medium heat. Add the flour and whisk constantly for about 1 minute. Gradually add the milk and heavy cream, continuing to whisk until smooth. Cook until the sauce thickens. Stir in cheddar, mozzarella, and Parmesan cheeses until melted and smooth. Add Worcestershire sauce, paprika, and mustard powder. Season with salt and pepper to taste.
  • Combine ingredients: In a large bowl, mix the cooked macaroni, beef mixture, and cheese sauce until well combined.
  • Bake: Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish. Sprinkle with additional cheese if desired. Bake for 20-25 minutes, or until bubbly and golden on top.
  • Top with bacon: Once baked, sprinkle the crumbled bacon over the top before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a few dashes of hot sauce to the cheese sauce.
  • This dish can be prepared up to 24 hours in advance and stored in the refrigerator before baking.
  • Leftovers can be frozen for up to 3 months; just make sure to cool completely before freezing.
