Ingredients

Scale
  • 1 lb ground beef
  • 1/2 lb bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Mix the Meatloaf: In a large bowl, combine ground beef, crumbled bacon, shredded cheese, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until well combined.
  • Shape the Loaf: On a parchment-lined baking sheet, form the meat mixture into a loaf shape.
  • Bake the Meatloaf: Bake for 25-30 minutes, or until the internal temperature reaches 160°F (71°C). Let it cool slightly.
  • Wrap in Puff Pastry: Increase the oven temperature to 400°F (200°C). Roll out the puff pastry, place the cooled meatloaf in the center, and wrap the pastry around it. Seal the edges and brush with beaten egg.
  • Bake the Wellington: Bake for an additional 20-25 minutes, or until the pastry is golden brown. Let rest for 10 minutes before slicing and serving.

Notes

  • Make sure the meatloaf cools slightly before wrapping in puff pastry to prevent the pastry from becoming soggy.
  • Customize the cheese and seasonings to your liking for different flavor profiles.
