These crispy Bacon Mac ‘n’ Cheese Taquitos combine all the cheesy, comforting flavors of mac ‘n’ cheese with the crunch of a taquito. Each bite is packed with creamy cheese, smoky bacon, and a perfectly golden, crispy tortilla wrap. Perfect as a snack, appetizer, or party food!

Ingredients

Scale
  • 1 Β½ cups cooked macaroni
  • 1 Β½ cups shredded cheddar cheese πŸ§€
  • 1 cup cooked, crumbled bacon πŸ₯“
  • 8 large flour tortillas 🌯
  • Β½ cup heavy cream
  • ΒΌ cup grated Parmesan cheese πŸ§€
  • 2 tablespoons unsalted butter 🧈
  • Salt and black pepper to taste πŸ§‚
  • Cooking oil for frying 🌻

Instructions

  • Prepare Mac ‘n’ Cheese Mixture:
In a saucepan, melt the butter over medium heat, then add heavy cream. Stir in cheddar cheese until melted and creamy. Add the cooked macaroni and bacon bits, mixing until well-combined. Season with salt and pepper to taste. Let cool slightly.
  • Assemble the Taquitos:
Lay each tortilla flat and spoon a generous amount of the mac ‘n’ cheese filling into the center. Sprinkle with Parmesan, then roll the tortilla tightly around the filling.
  • Fry the Taquitos:
Heat cooking oil in a skillet over medium-high heat. Place taquitos seam-side down in the skillet and cook until golden brown on all sides, about 2-3 minutes per side.
  • Serve and Enjoy:
Remove the taquitos from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauces, such as sour cream, salsa, or spicy mayo.

Notes

  • Baking Option: If you prefer a lighter option, you can bake the taquitos at 400Β°F (200Β°C) for 15-20 minutes or until golden.
  • Storage Tip: These taquitos can be frozen before frying. Place assembled taquitos on a baking sheet, freeze until solid, and store in a freezer bag. Fry or bake from frozen.
  • Cheese Variations: For a richer flavor, try Monterey Jack or smoked gouda in place of cheddar.
