Description

These Bacon Ranch Chicken Tacos are a delicious twist on a classic dish. Juicy, seasoned chicken, crispy bacon, and creamy ranch dressing come together in a warm tortilla, creating a flavorful and satisfying meal.   • 1 lb chicken breasts, boneless and skinless
  • 6 slices bacon
  • 1 packet taco seasoning
  • 1 cup ranch dressing
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Transfer the bacon to a paper towel-lined plate to drain, then crumble it into bite-sized pieces.
  • Season and Cook the Chicken: Season the chicken breasts with taco seasoning. In the same skillet used for the bacon, heat olive oil over medium heat. Cook the chicken for 6-8 minutes on each side, or until fully cooked (internal temperature of 165°F). Remove from the skillet and let rest before slicing into thin strips.
  • Warm the Tortillas: Warm the flour tortillas in the microwave or on a stovetop.
  • Assemble the Tacos: Spread a spoonful of ranch dressing down the center of each tortilla. Add a few strips of chicken, followed by crumbled bacon. Top with shredded lettuce, diced tomatoes, cheddar cheese, and green onions.
  • Serve: Fold the tortillas and serve immediately while warm. Optional: Add extra ranch dressing or a squeeze of lime juice.

Notes

  • For a healthier option, use turkey bacon and whole wheat tortillas.
  • You can prepare the bacon and chicken ahead of time and store them in the fridge until ready to assemble.
