Ingredients

Scale
  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 cup shredded cheddar cheese
  • ½ cup BBQ sauce (plus extra for glazing)
  • 6 strips bacon, cooked and crumbled
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Cook bacon until crispy, then crumble it into small pieces.
  3. Combine ground beef with breadcrumbs, shredded cheddar cheese, crumbled bacon, chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, salt, pepper, smoked paprika, and milk in a large mixing bowl.
  4. Add the egg and mix gently until well combined. Avoid overmixing to keep the meatloaf tender.
  5. Shape the mixture into a loaf on the prepared baking sheet or press it into the loaf pan.
  6. Glaze the loaf with BBQ sauce, ensuring it’s evenly coated.
  7. Bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Rest the meatloaf for 10 minutes before slicing. Serve with extra BBQ sauce on the side.

Notes

  • Feel free to experiment with different types of cheese, such as Monterey Jack or pepper jack, for a different flavor twist.
  • For a spicier kick, add some chopped jalapeños to the meat mixture.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
