  • Pasta:
    • 8 oz elbow macaroni (or any short pasta)
  • Cheeseburger Mix:
    • 1 lb ground beef
    • 6 slices of bacon, cooked and crumbled
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup shredded cheddar cheese
    • 1 cup shredded mozzarella cheese
    • 2 cups milk
    • 2 tbsp all-purpose flour
    • 2 tbsp unsalted butter
    • 1 tbsp ketchup
    • 1 tbsp mustard
    • Salt and pepper to taste
  • Garnish:
    • Sliced pickles (optional)
    • Chopped green onions (optional)

Instructions

  1. Cook the Pasta:
    Boil a large pot of salted water. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  2. Cook the Ground Beef:
    In a large skillet over medium heat, cook the ground beef until browned. Add the chopped onion and garlic, cooking until the onion is soft and translucent. Drain any excess fat.
  3. Make the Cheese Sauce:
    In a separate saucepan, melt the butter over medium heat. Whisk in the flour to form a roux, cooking for 1 minute. Gradually add the milk, whisking constantly. Cook until the sauce thickens. Stir in ketchup, mustard, cheddar, and mozzarella cheeses until smooth.
  4. Combine:
    Add the cooked pasta and ground beef mixture to the cheese sauce. Stir until everything is well combined and heated through.
  5. Add Bacon:
    Stir in the crumbled bacon, saving some for garnish.
  6. Serve:
    Transfer to a serving dish and garnish with additional bacon, sliced pickles, and chopped green onions if desired.

Notes

  • Feel free to substitute other cheeses like Gouda or Monterey Jack.
  • For a spicier kick, add a pinch of red pepper flakes or use pepper jack cheese.
